Our chilies are fresh picked from our gardens, and within 72 hours are de-stemmed, washed, course ground, heat treated and put into 5 gallon buckets. We fill a 5 gallon bucket with fresh chiles (40lbs +-2lbs) after a course grind, we then add 1 gallon of vinegar, and heat treat, and place the mash 5 gallon buckets.
We can blend the chiles to a milk shake consistency, but that adds cost to our process, that we pass along to our customers, some prefer it this way.
